Grilled Parmesan Asparagus

This simple but delicious recipe makes my favourite accompaniment to both fish and chicken. I call it Asparagi Contessi at home as I adapted it from one of our favourite Italian restaurants.

  • 250g bunch asparagus
  • 10g butter
  • parmesan
  • salt and pepper




  1. Preheat grill to high
  2. Prepare asparagus by breaking off stems and rinsing. The stems should break off easily if the asparagus is fresh.
  3. Pat dry and steam for 4 minutes.
  4. Remove from steamer and mix in bowl with butter. Season with salt and pepper.
  5. Lay asparagus flat in one layer on a roasting sheet. Pour over any remaining butter from mixing bowl.
  6. Grate fresh parmesan on top until asparagus is covered in a light coating.
  7. Grill for about 1 minute. It will go quickly so keep your eye on it!
  8. Remove with spatula onto plate and serve!
